Rainbow Cupcakes

This was my first time making rainbow cupcakes, even though I have been drooling over them for quite some time due to all the inspiring posts on them over at Craftster. Even though it can be very time consuming, they were really fun to make ... especially at 1:00 in the morning when me and my friend decided we wanted to make cupcakes. :) I have to say that the most amazing thing about these cupcakes is the fact that when you bite into them you get to see a rainbow of colors, which would be a nice surprise for someone who didn't know about their wonderful insides.

To make rainbow cupcakes you will need:
  • White cake mix & whatever ingredients are listed on the box
  • Food coloring
  • Cupcake cups*
  • Icing*
  • Sprinkles*
(* items are optional)

Directions:
  1. Mix the cake mix according to the directions on the box
  2. Separate the cake mix into different bowls, one for each color you want to use
  3. Add food coloring to the bowls of cake mix (we ended up using A LOT of food coloring, but we wanted to make sure that the colors were bright after they were baked)
  4. Place your cupcake baking cups into your pan
  5. Using your weapon of choice (I used a fork) spread your first layer of colored cake mix into each cup, make sure that it completely covers the bottom
  6. Repeat this process with the next color, make sure not to mix the colors together by lightly pushing the new color towards the edges of the cup
  7. Repeat until all colors are used
  8. Bake according to the directions on the box
  9. Let cool
  10. Decorate
  11. Enjoy! :)
